Keto chocolate chip muffins with coconut flour

Sometimes you just feel like snacking. With this recipe you don't have to feel guilty about it though. These Keto chocolate chip muffins are low carb and sugar free!

Week two of the keto challenge and I’m starting to like it! This recipe definitely helps me get over my cravings and I’m sure you’ll like it too! You can make 6 muffins with this recipe.

Step by step guide

Ingredients

– 3 eggs
– 40 g coconut flour
– 40 gr grass fed butter
– 1/2 Keto Cacao bar (25g)
– Backin powder
– Vanilla extract
– Pinch of salt

Mix it up

Mix the butter, coconut flour and baking powder using a mixer. Use the warmth of your hands to melt the butter and fold the dough into a ball. Add the eggs and whisk again. Preheat the oven on 200 degrees Celsius.

Add the chocolate chips

Cut the chocolate bar into smaller and bigger pieces and carefully fold them into the mixture.

Bake in the oven

Use a spoon or your fingers to role the dough into small balls about 3/4 of your cups. Place the cups into the oven for about 15-17 minutes on 200 degrees Celsius.

Cool down

Fresh out of the oven they’re too dry to eat yet.Let the muffins cool down before you eat and store them in a bowl with a lid to keep them moist.
