HEALTHY 2 INGREDIENT BREAKFAST PANCAKES
I always eat bananas for breakfast, but after a while it starts to get old. That's when I started experimenting with what I can do with them, from a smoothie to a Greek style yoghurt-banana combination, I've tried it all! This recipe, however, has to be my all time favourite. It's healthy, easy and best of all so delicious! This will guaranteed be a great start of the day.
And the good thing is: you only need two ingredients! I always add cinnamon for some extra taste, but you can also add some cheese on top or even bacon. Enjoy!
WHAT'S IN IT?
- 2 bananas
- 3 eggs
STEP BY STEP GUIDE
Start by gathering your ingredients. The best combo is 2 banana's and 3 eggs, but you can also go for less pancakes by using 1 banana and 2 eggs.
Mash up the banana with a fork. Best is to do it in a bowl, but nothing squared as you won't get the banana out of them.
Throw in the 3 eggs and whisk with your fork. Make sure you mix everything evenly, that will leave you with the best taste.
Grab your pan and heat it slowly on low fire. This is important because when you heat it on high fire the inside won't cook through and when you try to flip it, it will fall apart. So low to medium fire it is. Don't forget to put oil in the pan because the pancake will stick to the bottom of the pan when you don't.
Bake until you see brown edges, then flip over the pancake using a wide spatula. Make sure the pancake is not sticking to the pan anywhere before you do this. They are kind of fragile 😉 Than bake the other side of the pancake.
Carefully take the pancakes out of the pan using a spatula and garnish with cinnamon or maple syrup. When you want something else try adding some cheese or bacon while baking, it's so good too!
