A LACTOSE FREE HOLIDAY FISH DISH WITH LOTS OF VEGGIES

The holiday season has started and what's a better way to celebrate, than celebrate with food!

I love sitting round the table with my whole family and just eat for hours, haha, and this dish is so easy to make and has a very light taste, so even the most difficult fish eaters will probably like it!

Another good thing is, that people with allergies can eat this too! It's lactose free, gluten free and has lots of veggies in it, so it is sort of healthy too. ;) I used a Dutch brand of potatoes which are super crispy when baked, but off course you can choose your own favourite potatoes to go with the fish dish.

 

WHAT'S IN IT?

Ingredients:

- 2 rainbow trouts
- 1 pack of Alpro Cuisine Soja
- 1 or 2 carrots
- 1 leek
- 1 onion
- 2 yellow peppers
- half a broccoli
- half a jar of capers
- ''Opperdoes'' potatoes

Extra:
- salt & pepper
- dille
- parsly
- butter
- olive oil

to a super easy holiday fish dish

“Start by gathering your ingredients”

Start by gathering your ingredients. I used a lot of vegetables, but off course you can add as much vegetables as you like and even leave a few out of it. The ones you do need are the leek, onion and carrot.

Edit: The capers provide a bit of a sour taste which give the dish an extra umpfh, but you can leave it out or add more as you wish!

“Look for some stray fishbones”

We bought the fish gutted by the fishmonger. The only thing left to do is to cut off the head and look for some stray fishbones. 

Edit: Gutting a fish can be pretty difficult. If you want to try it yourself, look it up on YouTube!

“Cut the leek in strips”

Cut the leek in strips to go inside the fish and into smaller pieces for the lactose free cream sauce.

Edit: A good knife is must have for any kitchen. Invest in a good steel one for example and keep it sharp by sanding it every month (by frequent use that is).

“Season the trout with lots of dille and a bit of parsley”

Season the trout with lots of dille and a bit of parsley, salt and pepper. Put them into an oiled up oven proof casserole and add as many capers as you like.

Edit: Add a little lemon juice to the fish. The sourness will go perfectly with the soft taste of the fish.

“Cut up the rest of the vegetables”

Cut up the rest of the vegetables and add half of the carrot and onion to the casserole. Also clean and slice the potatoes thinly.

Edit: The rest of the vegetables we will simple bake, so you haven't chopped them up for nothing.

“Add the package of Alpro Cuisinie Soja to the fish”

Add the package of Alpro Cuisinie Soja to the fish and add half of the remaining leek to the casserole. Put the casserole in the oven for about 15 to 20 minutes on 200 degrees Celsius.

Edit: You will know that your trout is ready when it easily falls apart when you put your fork into it. Gently stick your fork into the thickest part if the fish when it's in the oven to check if it's ready.

“Bake the remaining vegetables in a baking pan”

Bake the remaining vegetables in a baking pan on medium high fire. I chose to steam the broccoli in a basket on top of boiling water, but off course you can also simply boil them for about 3 minutes.

Edit: I chose to steam the broccoli, because it preserves most of the vitamins in it, instead of washing them away in the boiling water.

“Bake the potatoes in a different pan”

While the vegetables are boiling, bake the potatoes in a different pan. Bake them for a few minutes, than turn them over.

Edit: When baking potatoes, first add butter to the pan and once this is hot, add olive oil. This will make sure your potatoes will turn nice and crispy.

“Add the broccoli to the vegetables”

Add the broccoli to the vegetables and bake them for a few minutes. Season them with salt and pepper before serving. Add some salt to the potatoes too. Take the fish out of the oven. Everything is now ready to be served, bon appetit!

Edit: You can also skip boiling the broccoli, but this will leave you having to bake much the longer.
